to Italian cuisines, whenever Italian food is mentioned, my mind would often wander to a crispy roasted chicken meal that coincides with usual family dinners of the Italians - Roasted chicken with rosemary, lemon and garlic.
It is very simple to cook, yet very tasting and delicious.
Ingredients
1.5 Pound Roasting Chicken, Quartered
five Tablespoons Freshly Squeezed Lemon Juice
four Large Cloves Of Garlic, Peeled And Halved
Salt & Pepper
1/4 Cup Olive Oil
Potatoes With Skin (Optional)
First thing you need to do is to slice the rosemary then put it into a large and flat dish with
olive oil, garlic, and lemon juice. Put the quartered chicken in the dish, then coat with the mixed ingredients . Afterwards, cover it with a plastic food wrap and put it into the refrigerator for at least two hours.
After which, you can now preheat oven to 425 degrees F and put the dish of coated chicken inside the oven for 15 minutes. Then, you need to turn the chicken and add the potatoes. After that, you can reduce the oven heat to 375 degrees and cook until the juice are deeply absorbed in the chicken and if the potatoes are cooked.
And at last! You can now serve the roasted chicken dish with potatoes and enjoy the cuisine with your family.
