
When I was young, my mom always prepare leche flan for me because she knows that this is one of my favorite desserts. I just can't resist its sweet taste. One time, we had a
visitor from France, and my mom excitedly served it on the table. Our visitor immediately recognized its taste and ask mom for more.
1 cup white sugar
1/4 cup water
1 (12 fluid ounce) can evaporated milk
1 (5 ounce) can sweetened condensed milk
6 egg yolks
1 tablespoon almond extract
To start, preheat oven to 350 degrees F or 175 degrees C. Then, cook sugar with water in a heavy saucepan over medium heat. Stir it until melted and light brown and pour into a flan pan or cake mold, tilting to coat the bottom of the pan. After that, set it aside. Then, in a bowl, gently whisk evaporated milk, condensed milk, egg yolks, and almond extract. Make sure not to incorporate any air into the mixture. Pour it into a prepared pan, and tap on the counter to remove any bubbles. Next, line a roasting pan with a damp kitchen towel and place baking dish on towel inside the pan. Place the roasting pan on the oven rack and fill with water to reach halfway up the sides of the
baking dish. Afterwards, bake in preheated oven for 45 to 50 minutes, until set and let it cool completely. Run a knife around the edges of the pan and invert the flan onto a rimmed serving platter to unmold. Finally, refrigerate for 8 hours or overnight before serving.
